Smoked Serrano Whole Chilli Pods

The Serrano Chilli is about 1 1/2 long and slightly pointed. This chilli has a very hot, savoury flavour. We have smoked Serrano which adds an additional dimension to this pod. Once the chilli is matured, it is scarlet red in colour. The Dried Serrano is primarily used in sauces. Reconstitute the chilli by placing in hot tap water (so the chilli softens), then dice and slice to ones liking. Scoville heat units are 8,000 to 22,000.

The Chiltepin is very HOT, 50,000 to 100,000 SU. In Mexico these tiny chillies are found on the table of restaurants and homes were they crumbled on top of food or added to soups, stews, salsas, chorizo or any dish where some heat and flavour is appropriate. Chiltepin are one of the few crops in the world which are harvested in the wild rather than cultivated. The Tarahumara Indians of the Sonoran Desert in Mexico believe that Chiltepin were the greatest protection against the evils of sorcery.

These are found all over Africa, where they are also called, African Devil, Congo, Mombassa, Pequin, Uganda and Zanzibar chillies. They are very small conical chillis ranging from 1-1.6 cm long. They grow wild or semi-wild and are bright scarlet red. Used a lot in Asian and Thai cooking. Ideal chilli for using dry and as chilli powder. Also ideal infusing with olive oil for a salad dressing with some kick.
